I'm a 45 year old mother of 3 boys. I live in a beautiful old house that needs a lot of TLC with my youngest son and 2 dogs. I am working hard at keeping myself healthy and fit by working out and doing a spot of running. I'm a creative person and am passionate about keeping traditional skills alive. I cook, knit, bake, garden, preserve, read, write and am now learning to spin and quilt. Oh and I sometimes swear.....

Slow cooked beef chilli with chocolate

Finally got round to typing this up.  It's based on a Lisa Faulkener recipe.  Wee bit faffy in the prep but once it's in the oven you can forget it and it freezes brilliantly.  Can post empananda and chimichanga recipes too if anyone is interested!

Slow cooked beef chilli with chocolate



1.5kg cubed braising steak

1 chorizo sausage cut into chunks

2 tins chopped tomatoes

4 garlic cloves, crushed

2 large onions, chopped

2 tsp all spice

2 tsp ground cumin

2 tsp cayenne pepper

¼ tsp dried chilli (or more to taste)

1 bay leaf

2 tbsp tomato ketchup

2 tbsp sugar

3 tbsp balsamic vinegar

½ bottle of red wine

50g dark chocolate (72%)

1 can red kidney beans (drained and rinsed)



Brown steak in batches in a large frying pan.

Drain and set aside.

Brown chorizo in a little oil until it releases its own oils.

Drain and add to steak but reserve oil.

Fry onions and garlic in chorizo oil for a few minutes.

Add spices, ketchup, sugar and vinegar.

Return steak and chorizo to pan and mix well.

Add red wine and bring to the boil.

Remove from heat and add chocolate, stirring until melted.

Put in a covered casserole and put in oven at 130 degrees C for 2 hours.

Add kidney beans and return to oven for further 45 mins.

Serve with rice, soured cream and tortilla chips.

What happens to the other half bottle of red?

Think I would have to go shopping for every single ingredient to make that (don't normally keep any of them in the house unless you count a truly ancient jar of sugar that's been used once in living memory)!

My mouth is watering just reading it, thank you for sharing it. I may replace our traditional steak pie at New Year with this. Davie, do you really need to ask what to do with the other half of the bottle?

Pete, you don't even have onions or ketchup??

Davie, the other half of the bottle went into a venison casserole. I can't drink red wine, it gives me a migraine. However, I have no probs with white wine ;-)

One sprouting red onion ('display until 06 Aug') that's not getting eaten now (have admittedly got through a few bundles of salad onions since), but no ketchup!

Without wanting to distract you from your triathlon training (!) can we have some more recipes please?
